Goodies with Grace: Vegan chocolate cake
FORT WAYNE, Ind. (WPTA) - Looking for a delicious, chocolatey treat that is perfect for everyone, especially those on a vegan or plant-based diet? Then look no further than this vegan chocolate cake recipe from Grace Kelly of GK Baked Goods.
- 1c oat milk
- 1 TBSP vinegar, apple cider, or distilled white vinegar works great
- 2c all-purpose flour
- 1 3/4c sugar
- 3/4c cocoa powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1/2c blended or vegetable oil
- 2/3c unsweetened applesauce
- 1 TBSP vanilla extract
- 1c water, boiling
In a large bowl combine the oil, applesauce, vanilla, oat milk, and vinegar. Stir to combine. Add in the dry ingredients then pour over the boiling water. Stir until smooth in consistency and all ingredients are mixed together. Spoon the batter into a lined cupcake pan. Bake the cupcakes at 350 for 20-25 minutes or until a toothpick comes out clean and the cake is springy. Let cool in the cupcake pan.
Vegan Chocolate Frosting
- 1 cup cocoa powder
- 1 1/2 c vegan butter, softened
- 4 1/2 c powdered sugar
- 2 tsp vanilla extract
- 1/4 c oat milk
In a bowl combine the softened butter with the cocoa powder and powdered sugar. Slowly stir together, then add your oat milk and vanilla. Stir until smooth.
*May need to add more oat milk to reach desired consistency*
